  • 2 teaspoons grated orange rind
  • 1 3/4 cups all-purpose flour (about 7 3/4 ounces)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 cup fat-free buttermilk
  • 1/3 cup finely chopped walnuts
  • Cooking spray
  • Sauce:
  • 1 cup sugar
  • 1 cup fresh orange juice (about 3 oranges)
  • 3 tablespoons fresh lemon juice

Preparation

  1. Preheat oven to 350°.

  4. To prepare sauce, combine 1 cup sugar and remaining ingredients in a small saucepan over medium-high heat; bring to a boil. Cook until reduced to 1 cup (about 15 minutes). Cool. Serve over cake.
