Simple, satisfying, and incredibly comforting—this single-pan supper has a lot going for it. Using a 9x13-inch pan for this tasty combo allows all the flavors to meld (and soak into your potatoes) in a most-delicious way. And since dinner is done all in one pan, clean-up is a total breeze.
12 ounces fingerling potatoes, cut into 1/4.-in.-thick slices
1 medium-size sweet onion, sliced
1 medium-size yellow bell pepper, sliced
1 medium-size green bell pepper, sliced
2 vine-ripened tomatoes, cut into wedges
2 tablespoons olive oil
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/4 teaspoon granulated garlic
1 pound Italian sausage links
How to Make It
Preheat oven to 425°F. Toss together potatoes, onion, bell peppers, tomatoes, oil, salt, black pepper, and granulated garlic in a 13- x 9-inch cake pan. Nestle sausage links in vegetable mixture. Bake in preheated oven until sausages are cooked through and browned and potatoes are tender, 35 to 45 minutes.
