How to Make It

Step 1

Combine first 7 ingredients in a small bowl; stir well with a whisk.

Step 2

Combine lettuce and dressing in a large bowl; toss well. Add croutons and cheese; toss well. Sprinkle with pepper.

Step 3

Note: Olive oil is high in monounsaturated fat, the type of fat that lowers "bad" cholesterol and raises "good" cholesterol. Avocados, peanuts, and canola oil are also good sources of monounsaturated fat.
