Caesar Salad

Yield Makes 8 servings


  • 3/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 6 anchovy fillets
  • 4 garlic cloves, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon pepper
  • 1 cup freshly shredded Parmesan cheese
  • 2 (10-ounce) bags chopped hearts of romaine lettuce
  • 1 (5.5-ounce) package large Caesar-style croutons

How to Make It

  1. Process first 7 ingredients in a food processor until smooth. Add Parmesan; process until blended. Toss with lettuce. Top with croutons.
