Cabbage Salad

This simple salad is like a Mexican coleslaw. The jalapeño adds a nice touch of heat; use less if you're sensitive to the pepper.

Ingredients

  • 16 cups thinly sliced cabbage
  • 4 cups thinly sliced onion
  • 1 cup chopped fresh cilantro
  • 3 tablespoons fresh lime juice
  • 1 tablespoon canola oil
  • 1/2 teaspoon salt
  • 1 jalapeño pepper, seeded and finely chopped

Preparation

Combine all ingredients; toss well.
