  • 2 1/2 cups thinly sliced red cabbage (about 1/2 small head)
  • 2 cups shredded carrots (about 2 large)
  • 1/3 cup vertically sliced red onion (about 1/2 small)
  • 1/3 cup green bell pepper strips
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons honey
  • 1/2 teaspoon grated fresh lime rind
  • 1/4 cup fresh lime juice
  • 2 tablespoons orange juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground cumin


  1. 1. Combine first 5 ingredients in a large bowl; toss gently.
  2. 2. Combine honey and next 7 ingredients in a small bowl; stir well with a whisk until blended. Pour honey mixture over cabbage mixture. Cover; chill at least 2 hours.
