Ingredients
- 2 1/2 cups thinly sliced red cabbage (about 1/2 small head)
- 2 cups shredded carrots (about 2 large)
- 1/3 cup vertically sliced red onion (about 1/2 small)
- 1/3 cup green bell pepper strips
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons honey
- 1/2 teaspoon grated fresh lime rind
- 1/4 cup fresh lime juice
- 2 tablespoons orange juice
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon ground cumin
Preparation
- 1. Combine first 5 ingredients in a large bowl; toss gently.
- 2. Combine honey and next 7 ingredients in a small bowl; stir well with a whisk until blended. Pour honey mixture over cabbage mixture. Cover; chill at least 2 hours.
