These were so good! Super easy to make and tasted great with Cooking Light's Creamy Spring Pasta. YUM! Will definitely make again.

So good we made it twice in one week. The second time I had baby carrots and added red pepper chunks and slices of red onion. Still wonderful. Unfortunately there were no leftovers.

I made this easy and tasty recipe for Rosh Hashanah today. Everyone loved the carrots-even the kids! I didn't use exact measurements but I cut-up eight large carrots, mixed with a little butter and olive oil, sprinkled some salt and pepper, and spread out on two cooking spray covered foil-lined baking sheets. Baked for about 20-25 minutes and the carrots were super delicious!

Very good but I would say to slice the carrots a bit thinner, maybe into almost matchstick size. The smaller and more browned they are, the better.

This is a great fast and easy side for a weeknight dinner. The first time I made it, we thought it was a little greasy. The 2nd time I only used about 1/2 teaspoon of butter, and it tasted just right (plus a few calories saved!) I used 2 cups raw carrots and after I took it out of the oven, portioned out 1/2 cup servings as noted in the recipe, but only came out with about 2.5 total servings. So if I were feeding more than 2, I'd bump up the ingredients a tad.

So good! It made 3 servings for us. We lined the baking sheet with parchment paper instead of using cooking spray.
