Brownie Pie à la Mode

Ingredients

  • 1/2 cup reduced-calorie margarine
  • 1/4 cup unsweetened cocoa
  • 3/4 cup sugar
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons vanilla extract
  • 2 egg whites
  • Vegetable cooking spray
  • 1 (1-ounce) package pre-melted unsweetened chocolate
  • 1 quart cookies-and-cream nonfat frozen yogurt
  • 4 low-fat cream-filled chocolate sandwich cookies, cut in half (optional)

How to Make It

  1. Melt margarine in a small saucepan over medium heat; stir in cocoa. Pour mixture into a large bowl. Add sugar and next 4 ingredients; stir well.

  2. Spread batter in a 9-inch round pan coated with cooking spray. Bake at 350° for 20 minutes or until a wooden pick inserted in center comes out clean. Let cool in pan on a wire rack. Cut into 8 wedges.

  3. Drizzle pre-melted chocolate evenly onto 8 dessert plates. Place a brownie wedge on each plate, and top each wedge with 1/2 cup frozen yogurt. Garnish each with a cookie half, if desired.
