Brown Sugar-Cinnamon Peach Pie

    An excellent pie with a very good crust. The pie is a bit too sweet as made but otherwise is definitely 5 stars. Be sure to use the butter quickly while cold, chill the crust, and freeze the pie as directed prior to baking.

    The pie was excellent! I skipped the part to peel the peaches and really have not noticed the peels being a problem while eating the pie. My husband and 4 year old son love this as well. I will be keeping this recipe to use every summer.

    This pie is so delicious. I don't make pies, but I used refrigerator pie crusts and my husband said it was the best peach pie he has ever eaten.

    I made it for July 4th with rave reviews from my family. The crust was delicious and we loved the combination of brown sugar and cinnamon. I did not find it necessary to bake the last 25 minutes covered with foil. When I got to that point the crust was already beautifully brown and the juices were bubbling.

    This pie is beautiful and delicious. My only complaint is that my hands-on time was way more than 30mins due to peeling the peaches (I did the boiling water method too!) and I didn't even make the crust. The time was way worth it in the end.

    I would definitely make this again. Time consuming but worth it. The crust was fabulous and I like how it was an all butter crust. The sweetness of the pie will depend on the sweetness of the peaches so add sugar accordingly. My peaches were not that sweet so I could have used a bit more sugar. Love, love this pie!

    My inlaws brought peaches from GA, so I made this pie last night. Major rave reviews!!! Only made 2 adjustments..I added 1/2 tsp. cinnamon to the crust & instead of freezing, I had to put it in the fridge(couldn't fit it into my sidebyside freezer). Using fresh peaches vs canned really made the difference in taste. When we left the inlaws last night they gave me more peaches to make another one! :)

    Great pie, but the 1/4-inch thick crust was way too much. Next time I will use my regular recipe for crust.

    I also didn't peel my peaches and they were just fine, save your time - it's a step you don't need. I don't like cinnamon, so I omitted it from the recipe and substituted 1 tsp of almond extract. Also replaced 1/4 Cup of flour with instant tapioca in the filling and 2-3 Tbsp of ice water in crust with ice cold vodka - I know - it sounds strange, but trust me - it works and it makes the crust super flaky and crispy.

    A super simple and effective way to peel peaches or anything for that matter is....Bring a large saucepan of water to boil....have a large bowl in your sink with ice water, lots of ice..... score a small x in the bottom, push a fork into the stem end and place in boiling water for 30 - 60 seconds, then into the ice bath....I prefer to do one at a time so I don't over do....when done take each out of the ice water and the peel practically slides off....Super Simple but very effective. works great with tomatoes. Just remember to keep your ice water full of ice, as that stops the 'cooking'....and releases the skin....

    I am not a big fan of peaches so I really made this just for my husband, and I have to say, it was fantastic. Not too sweet, not too peachy, but really good. I think it's the cinnamon that does the trick. Needless to say, I am now a fan of peach pie and will be making this a lot during this summer's peach season.

    The filling in this pie is very good but the pie crust is too much. 1/4 inch and 4 cups of flour is just too thick of a crust. Will make it again, but use my old faithful crust recipe, that only uses 2 cups of flour for a 2 crust pie.
