Brown Butter-Almond Sauce
Add a rich touch to light, mild fish, such as flounder, sole, or trout.
Yield: Makes 3/4 cup
Ingredients
- 1/2 cup butter
- 2/3 cup (2 ounces) sliced almonds
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh parsley
Preparation
- Melt butter in a large skillet over medium-high heat. Add almonds; sauté 2 to 4 minutes until golden brown. (Do not overcook or butter will burn.) Stir in lemon juice and parsley. Serve immediately.
