This was simple and delicious. Great way to serve tomatoes. We had it with supper, but my family wants it with eggs at breakfast next time.

We love this recipe and had actually forgotten about it. It is really tasty in the winter months when the tomatoes are not so great. My husband and I just started a new diet plan and this recipe will go into heavy rotation, although I will probably cut some of the oil and salt. We can't wait to try leftovers with eggs.
