The Sweet-and-Sour Cucumbers are reminiscent of a marinated deli salad to go with sandwiches.


8 servings (serving size: 1 fillet and 1/3 cup cucumbers)

2 tablespoons Dijon mustard
1 tablespoon brown sugar
1/2 teaspoon salt
8 (6-ounce) salmon fillets (about 1 inch thick)
Cooking spray


Prepare broiler.

Combine the first 3 ingredients. Brush mustard mixture over fillets. Place fillets, skin sides down, on a broiler rack coated with cooking spray; broil 8 minutes or until fish flakes easily when tested with a fork. Serve fish with Sweet-and-Sour Cucumbers.
