Broiled Salmon with Citrus Salsa

Yield 4 servings (serving size: 1 fillet and about 2/3 cup salsa)
Jarred citrus salad, available in the produce section of the supermarket, can be substituted for the orange and grapefruit sections.

Ingredients

  • 4 (6-ounce) salmon fillets
  • Cooking spray
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup coarsely chopped orange sections (about 1 large)
  • 1 cup coarsely chopped grapefruit sections (about 1 large)
  • 2 tablespoons minced fresh cilantro
  • 1/2 cup chopped red bell pepper
  • 1/4 cup finely chopped red onion
  • 1 jalapeño pepper, seeded and finely chopped
  • 1 tablespoon sugar

How to Make It

  1. Preheat broiler.

  2. Place fillets on rack of a broiler pan coated with cooking spray. Brush fillets with olive oil; sprinkle with salt and pepper. Broil 10 to 12 minutes or until fish flakes easily when tested with a fork.

  3. While fillets cook, combine orange sections and remaining ingredients in a bowl. Serve with fillets.
