- 3 tablespoons butter or margarine, melted
- 2 tablespoons lemon juice
- 4 (1/4-pound) cubed steaks
- 1 teaspoon salt, divided
- 1/2 teaspoon pepper, divided
- 4 slices bacon
- 4 (1/2-inch-thick) slices tomato
- Fresh parsley sprigs
How to Make It
Combine butter and lemon juice; stir well, and set aside.
Sprinkle steaks with 1/2 teaspoon salt and 1/4 teaspoon pepper. Place steaks on lightly greased rack in a shallow roasting pan; brush tops with half of lemon-butter mixture.
Broil steaks 6 inches from heating element 5 minutes; turn steaks, and brush with remaining lemon-butter mixture.
Place bacon on rack with steaks; broil an additional 3 minutes. Place one tomato slice on top of each steak; sprinkle with remaining salt and pepper. Crumble bacon; place equal amounts on top of tomatoes. Broil an additional 2 minutes.
Transfer steaks to a warm serving platter; garnish with parsley sprigs. Serve immediately.
