Broccoli Soup

Yield about 7 cups


  • 4 1/2 cups milk
  • 2 (10-ounce) packages frozen chopped broccoli, cooked and drained
  • 8 sprigs fresh parsley
  • 1/4 cup chopped celery leaves
  • 1/4 cup all-purpose flour
  • 1/4 cup butter or margarine, melted
  • 2 thin slices onion
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • Additional celery leaves

How to Make It

  1. Combine all ingredients, except additional celery leaves, in container of an electric blender; process until smooth. Pour mixture into top of a double boiler; cook over simmering water until thickened. Serve hot; garnish with additional celery leaves.
