Brie with Jeweled Fruit Compote

    This has been my go-to recipe for holiday season. Like other reviewer I sliced off top of rind and spooned a little of the warmed sauce over the brie then warmed the whole thing in micro. I substituted blackberry brandy cause that is what I had. I found this made enough sauce to spoon over 2 8-ounce wheels so could make it once and take to two different parties. I don't review many recipes because frequently there are already so many reviews but this one deserves to be highlighted

    Everyone loved it. Lots of fruit. (Next time I'll dice the figs and add a couple more, though.) I substituted a good amount of dried rosemary and it turned out great.

    I've made this twice now and each time it's the first appetizer to disappear. Everyone loves it. The first time I made it as written. The second time I decided to use rum instead of Brandy and after heating the mixture I puréed 3/4 of it in a mini food processor. The consistency of the purée made it easier to eat and wasn't as much liquid. I also heated the Brie and then put the warm compote on top. Wonderful and easy. Defiantly a keeper!!
