Breakfast Tacos

Yield 6 tacos


  • 6 eggs
  • 1/4 cup heavy cream
  • 3 tablespoons butter
  • 6 corn tortillas
  • 1 package Jimmy Dean Sage Roll Sausage, cooked, crumbled, drained
  • 1/2 cup red bell pepper, 1/4 dice
  • 1/2 cup green bell pepper, 1/4 dice
  • 1/2 cup cheddar cheese
  • 3 tablespoons fresh cilantro, chopped

How to Make It

  1. In a bowl, mix the eggs and heavy cream. In a saute pan, heat 3 tablespoons butter over medium heat. Add the egg mixture and scramble; set aside. To build the taco, place the egg in the tacos, followed by the cooked sausage. Next, place the red and green bell pepper on top of the sausage. Top with cheese and cilantro.
