- 1 cup fine dry breadcrumbs
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 6 (3/4-inch-thick) lamb loin chops
- 2 eggs, beaten
- 1/4 cup clarified butter
How to Make It
Combine breadcrumbs, salt, and pepper. Dip chops in egg; dredge in breadcrumb mixture.
Melt butter in a large skillet over medium heat. Add chops, and cook for 5 minutes, turning to brown both sides.
Transfer chops to a 13- x 9- x 2-inch baking dish. Cover and bake at 350° for 30 minutes or until chops are tender.
