Bread Pudding

Bread pudding

  • Yield: 8 servings

Ingredients

  • 400g white bread
  • 73g-100g sugar
  • 175g butter or margarine soft
  • 350g mixed fruit
  • 2 eggs beaten
  • 75ml g/mixed spice
  • caster sugar/ demerara sprinkles

Preparation

Soak the bread in water, squeeze out water and put bread in bowl

Add all other ingredients

Grease a tray bake tin and line with parchment paper

Set oven temp to 350 / 180

Spoon mixture into tin level out and bake for 11/4-11/2 hours

Remove tin from oven test with skewer comes out clean ready

While still warm sprinkle with caster or demerara sugar

Cool then cut into squares
