Place nectarines in a wire basket or cheesecloth, and dip into boiling water 1 minute. Plunge nectarines in cold water; drain. Remove skin.
Combine nectarines, sugar, and water in a medium saucepan; bring to a boil. Reduce heat, and simmer 1 minute. Stir in 1/2 cup brandy and vanilla; chill thoroughly.
Drain nectarines, and place each in a chilled individual dessert dish. Combine whipping cream, powdered sugar, and remaining brandy, mixing well. Spoon over nectarines. Garnish with raspberries and mint leaves.
