Preheat oven to 325°.
Combine first 4 ingredients in a bowl; toss with 1/2 cup flour.
Combine remaining 1 cup flour, baking soda, and apple pie spice.
Beat butter at medium speed of a mixer until creamy; gradually add sugar, beating well. Add egg, mixing well. Stir in vanilla and brandy. Add flour mixture, mixing just until blended; stir in fruit mixture
Drop level tablespoonfuls onto baking sheets coated with cooking spray. Flatten cookies slightly with back of a spoon. Bake at 325° for 12 to 14 minutes or until golden. Remove from oven; let stand 2 to 3 minutes or until firm. Remove cookies from pan; let cool on wire racks.
