Bran Muffins

Yield 1 dozen

Ingredients

  • 1 cup wheat bran cereal
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 3 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 eggs, beaten
  • 3/4 cup milk
  • 3 tablespoons butter or margarine, melted

How to Make It

  1. Combine first 5 ingredients in a medium mixing bowl, stirring well. Make a well in center of mixture. Add eggs, milk, and butter; stir just until dry ingredients are moistened. Spoon mixture into greased muffin pans, filling two-thirds full. Bake at 450° for 12 minutes.
