Braised Leeks

Ingredients

1/4 cup butter or margarine
8 large leeks (about 3 pounds), cleaned
1 cup water
1/2 teaspoon salt
1/4 teaspoon pepper

Preparation

Melt butter in a large heavy skillet; add leeks, tossing well to coat with butter. Cover and cook over medium heat 10 minutes. Add water; bring to a boil. Reduce heat; cover and cook over low heat 15 minutes or until leeks are tender. Drain well. Sprinkle with salt and pepper.
