Braised Cucumbers

Yield 4 servings

Ingredients

  • 1/4 cup butter or margarine
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 2 large cucumbers, peeled and cut into 1-inch slices
  • 1 medium onion, chopped
  • 2 medium tomatoes, peeled and cut into eighths
  • 1/4 cup water
  • 1 teaspoon lemon juice
  • 1 teaspoon dried whole dillweed
  • 1/2 cup commercial sour cream

How to Make It

  1. Melt butter in a heavy saucepan over medium heat. Add sugar and salt; cook until lightly browned. Add cucumber and onion; cook, stirring constantly, until onion is tender. Add tomatoes, water, lemon juice, and dillweed. Cook an additional 12 minutes. Remove from heat; stir in sour cream. Serve immediately.
