Braised Acorn Squash
- 1 medium squash
- 3 cups apple cider
- 1 1/2 teaspoons butter
- salt and pepper
- 1. Cut a medium squash in half lengthwise, scoop out seeds with a large metal spoon and cut squash into 1/2-inch-thick slices.
- 2. Place squash slices in a large skillet, cover with apple cider and add butter. Bring to a simmer. Cover skillet and cook until squash is tender, about 10 minutes. Season with salt and pepper.
