Combine carrot, broth, and bourbon in a medium saucepan; bring to a boil. Cover, reduce heat, and simmer 10 minutes. Uncover and cook over high heat 5 minutes.
Add sugar and remaining ingredients to carrot mixture, stirring well. Cook over medium heat an additional 2 to 3 minutes or until carrot is tender.
