Bourbon Balls

    I made this recipe last Christmas and planning on making it again this year. They taste amazing and were really appreciated by those who received them! They were quite difficult for me to roll into balls even though I chilled well. But well worth trying again. I used Guiardelli semisweet chips with a few parafin flakes rather than butter. I also left the pecan half off until after dipping and then topped them with 1 pecan half.

    To give them more bourbon flavor, soak the pecans overnight. Also I usually use 1/2 c bourbon to 1 cup of pecans. I agree with Lucy519 on adding the paraffin instead of the shortening, however I have never used shortening...

    If you don't have shortening, you can use butter, or just omit it altogether. I don't like the idea of eating wax, which is what paraffin is. I made these for a Derby party and I'm making them again for a bourbon tasting. They were a big hit. I recommend even freezing the balls before dipping them in chocolate.
