Blueberry Pancakes

    Very good! We substituted chopped bananas and on a few we sprinkled mini chocolate chips for the blueberries. Kids gobbled them up and I felt like I was eating a 'healthier' pancake. I did have to add a few tablespoons of milk b/c the batter was too thick.

    The pancakes were nice and fluffy. I used 2 cups whole wheat pastry flour. I had a (5.3 oz) container of Greek yogurt on hand so I used it and added 2 TBS of water. The batter was very thick and dropping the berries on top, really dirty up the griddle.

    Didn't have any pancake mix on hand and made these - so light and fluffy. Best pancakes! Would definitely make again.

    I'm always looking for a great pancake recipe. These were good...not out of this world great. I would make them again though...and always with a hair more nutmeg!

    I have tried a lot of homemade pancake recipes and this takes the cake. I liked the flavor - I think the lemon juice and yogurt gave them a nice tang. Mixed the blueberries right into the batter and they came out great.

    The blueberry pancakes turned out pretty well. However, even a non-stick pan needs to be sprayed with oil and it's very awkward to place two tablespoons of blueberries on top of each pancake once it's in the pan. It's much easier to stir the entire cup of blueberries into the batter before dropping batter into pan.

    These pancakes were very good. I like the addition of the wheat flour. The batter was very thick and didn't exactly pour as the recipe said. The only ingredient that I used that was different was I mistakenly picked up French vanilla yogurt instead of just Vanilla yogurt. I would make again.

    This recipe is a good find, especially because the pancakes are half whole wheat. I made a few changes though, which made the pancakes pour better. I didn't have yoghurt on hand, so I substituted non-fat buttermilk, which you can make for this recipe by pouring 3/4 Tsp. of white vinegar into the 3/4 cup of fat free milk and let stand for five minutes. I also increased the nutmeg to 3/4 tsp, and the vanilla to 2 tsps. This compensated for the lack of vanilla in the yoghurt. Also, I added an additional Tsp of sugar because even non-fat yoghurt can have quite a bit of sugar. We used raspberries and strawberries and topped everything with a small amount of honey butter (from the carrot cake pancake recipe). Overall, really tasty, but given that I made so many changes that made the batter less thick, I couldn't justify a higher rating.

    I really loved this pancake recipe. They were filling with good flavor, and the addition of whole wheat flour upped the nutritional content. The only thing we changed was to add 1/4 cup milk to make the batter less thick. We had used a thicker style yogurt that created a way too dense batter. But if using regular yogurt you might not need this addition.

    The yogurt makes these pancakes a little more nutritious tasting. Very good addition to basic pancake ingredients! We will use this recipe again, I'm sure. I added milk to thin the recipe a tad bit so they would pour easier.

    I made this recipe yesterday... my husband absolutely LOVED it and asked me to please keep the recipe because he will want to eat these yummy (& healthy) pancakes!

    These puffed up nicely, cooked evenly, and smell great. We just picked 10 lbs of strawberries so I am using those instead of blueberries. Placing the strawberries by hand once the pancake has been turned is ideal because you can distribute them evenly.

    I've tried making pancakes from scratch before, with disappointing results. But these are easy and delicious! The batter is thick, so I added some water to get it to the consistency I wanted. I also added extra vanilla (you can never have too much vanilla!) Delicious. :)

    I made these pancakes this morning and they were fantastic! The batter was very thick but the pancakes still turned out very fluffy (and the perfect golden brown!). I almost skipped the fresh lemon juice but added it in the end. The flavor really came through and it was REALLY delicious! Overall, easy, yummy and very filling.

    Well I have not made these yet, but we always love blueberry pancakes. But..... can someone tell me what 2 19/50 is for a measurement. I know they want to use weight now in baking instead of volume buy hey isn't this a little ridiculous.

    I love to cook/bake, etc., but I suck at pancakes.... that being said, these were the best pancakes I've ever made, quite honestly. I put together the dry ingredients the night before, and mixed in the wet stuff right before making them this past Sunday morning and they came out wonderfully delicious, light, and fluffy!! I was thrilled! Changes... I didn't have any plain or vanilla yogurt on hand so I used a single serving cup of mixed berry la yogurt I had in the fridge and added an ounce of sour cream to make up the difference. Also added some lemon zest in addition to the juice. These were delicious blue berry pancakes... so much so, we had a couple of them without syrup and they were plenty sweet.

    Fluffly, light and delicious. Just stirred in the blueberries with the wet ingredients and it was great.

    I was skeptical about liking a pancake recipe using whole wheat flour (bad past recipes). But this one was great! I also stirred in the blueberries instead of topping with them. Will definitely make it again!

    A different kind of pancake. Very good. The addition of whole wheat flour gives it a pleasant grainy feel while eating.
