Blueberry-Orange Bread

Yield Makes 1 loaf

Ingredients

  • 1 cup bran cereal, crushed
  • 3/4 cup water
  • 1 tablespoon grated orange rind
  • 1/4 cup fresh orange juice
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 2 tablespoons vegetable oil
  • 1 cup frozen blueberries, thawed

How to Make It

  1. Stir together first 5 ingredients in a large bowl; let stand 10 minutes or until cereal softens.

  2. Stir in flour and next 6 ingredients just until dry ingredients are moistened. Gently fold in blueberries. Pour batter into a greased 9- x 5-inch loafpan.

  3. Bake at 350° for 1 hour or until a long wooden pick inserted in center comes out clean. Cool on a wire rack 10 to 15 minutes; remove from pan, and cool completely on wire rack.
