DELICIOUS! Blueberries are a big crop here and I wanted to find another way to use those in the freezer. This is it! Instead of 3/4 cup simple syrup, I used 1/2 cup syrup + 1/4 cup blueberry schnapps. Perfect!!!!
Blueberry Daiquiris
The Simple Syrup recipe makes enough for two batches of blueberry daiquiris. The syrup is also handy for sweetening iced tea.
Yield: 6 servings (serving size: 2/3 cup)

Ingredients
- 1 cup blueberries
- 3/4 cup Simple Syrup
- 1 tablespoon fresh lemon juice
- 3 cups crushed ice
- 1/2 cup rum
- 3 tablespoons fresh lime juice
Preparation
- 1. Combine first 3 ingredients in a blender, and process until smooth. Strain mixture through a sieve into a bowl, and discard solids. Combine blueberry mixture, 3 cups crushed ice, rum, and lime juice in blender, and process until smooth.
