Preparation

  1. Blueberry Crisp

  2. 1 pt. blueberries
  3. 4 tsp. sugar
  4. 4 tsp. tapioca
  5. Few drops bitters (optional)

  6. TOPPING:
  7. 1/2 c. Bisquick
  8. 2/3 c. quick-cook oats
  9. 1 tsp. nutmeg
  10. 1/2 c. brown sugar
  11. 1 tsp. cinnamon
  12. 2 tbsp. butter or margarine

  13. Wash and pick over blueberries. Divide among four 6 ounce custard cups. Sprinkle
  14. each with 1 teaspoon tapioca, 1 teaspoon sugar and bitters. Prepare toping.
  15. Spoon topping over each and press gently.

  16. Microwave on high 2 minutes, turn, cook 2 minute more. If bubbling, remove. If
  17. not, microwave 30 seconds more. WATCH. Remove carefully, cool, and refrigerate.
  18. (Thickens as it cools.) May substitute 3 cups sliced peaches or apples for
  19. berries and sprinkle with lemon juice instead of bitters. Microwave until fork
  20. tender. Serves 4.
