Blue Cheese Toasts

We love the contrast of funky blue cheese with the sweet balsamic vinaigrette in the salad. If you prefer a milder topper, try crumbled feta or goat cheese.

Ingredients

  • 2 ounces whole-wheat French bread baguette, cut diagonally into 4 (1/2-inch-thick) slices
  • Cooking spray
  • 1 ounce blue cheese
  • 1 teaspoon minced fresh chives
  • 1/8 teaspoon freshly ground black pepper

How to Make It

  1. Preheat broiler to high.

  2. Coat both sides of bread slices with cooking spray; arrange on a baking sheet. Broil 1 minute on each side or until toasted.

  3. Spread blue cheese over bread slices. Broil 1 minute. Top with chives and pepper.
