How to Make It

Beat butter, blue cheese, and 1/4 tsp. cracked black pepper at medium speed with an electric mixer until smooth. Add flour, and beat until just combined. (Do not overmix.) Shape dough into a log (about 1 3/4 inches in diameter). Wrap in plastic wrap; chill 3 to 24 hours. Preheat oven to 375°. Cut log into 1/4-inch-thick slices; place 2 inches apart on parchment paper-lined baking sheets. Sprinkle with additional black pepper. Bake, in batches, 10 minutes or until golden brown. Cool on pans 5 minutes. Transfer to a wire rack, and cool completely (about 20 minutes).
