Blue Cheese Spread

We could not get enough of this spread when we served it with apple slices. The creamy cheese mixture and crunchy pecans make a great combination with the sweetness of the apple. But if apples are too high in carbs for you, we loved it with crisp celery sticks, too.

1 (8-ounce) package fat-free cream cheese, softened
1/2 cup crumbled blue cheese
1/4 cup chopped pecans, toasted


1. Combine cream cheese and blue cheese in a food processor; process 20 seconds or until blended.

2. Line a 1-cup bowl with plastic wrap; press cheese mixture into bowl. Cover and chill at least 8 hours.

3. Unmold cheese, and remove plastic wrap. Roll outside edge of cheese in chopped pecans. Serve cheese spread with celery sticks and apple slices (celery and apple not included in analysis).
