I had never made blue-cheese puffs before but this recipe was so easy to follow that came out GREAT on the first try. It goes well with any occasion. I served my batch with drinks at a cocktail party. I didn't have any fresh thyme so I used dried thyme. Everyone loved them, and the leftovers stayed fresh in the fridge for 5 days in an airtight container.
