Black Pepper-Pineapple Vinaigrette

Yield 5 cups

Ingredients

  • 1 medium pineapple, peeled and diced
  • 1/2 cup lime juice
  • 1/2 cup rice wine vinegar
  • 2 tablespoons peanut oil
  • 3 star anise
  • 1/2 teaspoon black peppercorns

How to Make It

  1. Process all ingredients in a food processor or blender until smooth, and chill. Serve with crab cakes, shrimp, or fish, or as a dressing for fruit salad.
