Makes 4 servings
1 bunch scallions
2 15-ounce cans black-eyed peas
1 10-ounce can diced tomatoes and green chilies (such as Ro-Tel)
1 large bag tortilla chips
freshly ground black pepper
Combine the peas with tomatoes and chilies, scallions, and lime juice. Season to taste with the salt and pepper. Serve with tortilla chips.
