Black-Eyed Pea Salad

Yield 4 cups

Ingredients

  • 3 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 (15.8-ounce) cans black-eyed peas, drained and rinsed
  • 2 celery ribs, diced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced red onion

How to Make It

  1. Stir together first 4 ingredients in a medium bowl; stir in black-eyed peas and remaining ingredients. Cover and chill at least 1 hour.
