- 2 tablespoon(s) balsamic vinegar
- 2 clove(s) garlic minced
- 1 teaspoon(s) sugar
- 2 can(s) black eye peas drained
- 2 plum tomatoes 1" pieces
- 1 red pepper chopped
- 1-2 jalapenos diced
- 1 bulb(s) parsley chopped
Preparation
- mix oil, vinegar garlic sugar s/p
- In bowl add remaining ingredients
- toss to coat
- serve room temp or refrigerate, serve cold
