Black Beans and Rice with Cheese

    This had great flavor. I did not have red pepper and did not substitute. Even so this was really good. Also forgot to put the cheese on but we did not miss it at all. The beans have great flavor. I will definitely make again.

    Finally! I have been searching for a black bean recipe forever with no success...until now. This is EXACTLY what I wanted. The best part is, it can be served without rice just as a side or with brown rice as a heartier complement. And...I forgot completely to add the cheese but didn't even miss it. A part of my permanent collection from now on!

    I was looking for a dirty rice recipe and came across this one. I added some left over grilled chicken and mixed the rice with the beans once they were done. Added some fresh tomatos and some frozen corn. Topped it off with the cheese. Delish! Great comfort food :)

    Great flavor and very easy. I didn't have any rice so I just served the beans as a side dish along with fajitas made with leftover Simply Pork. Very good quick meal.

    This is one of my go-to sides - so easy to make, you usually have everything already (or can sub in what you have, like I did today - used some roasted red pepper and jalapeno instead of the fresh red pepper). I usually don't drain and rinse my beans, but let them cook down a little more (and use less water). Increases the sodium level, but better flavor. I up the cumin to taste, and if I have time, let it simmer and thicken.
