Black Bean-Tomato Soup with Cilantro-Lime Cream

    Goes together very quickly and delivers great flavor -- nice and spicy. No changes to the recipe. The Cilantro-lime cream is wonderful. Definitely will make again, but will double the recipe so there's leftovers to enjoy. Served with CL Fresh Thyme Popovers.

    This was easy and good. I ended up making a double batch and used drained non-fat yogurt instead of low fat sour cream. I served it with Italian bread crostinis with olive oil and a bit of parmesan cheese. It made for a good, substantial, yet light meal on one of the coldest nights of the year.

    Very, very good soup. The lime cream turned out a little liquid-y, but when drizzled into the soup - magic! Will quadruple recipe for an upcoming party. This is a definite crowd pleaser.

    This has become a staple of mine. My pantry always includes these ingredients, Easy to make and assemble, plenty of flavor and taste. I like half pureed and half chunky. Cheers!

    Husband said "wow, gourmet chili" I used regular chili powder and a little smoky paprika. Also, I added a can of kidney beans & only put half of the recipe in the blender. I'll definitely make this again.

    Easy and yummy. Great with a side of quesadillas. Great left over. I have made it about a dozen times and my husband never gets sick of it.

    Made exactly as written. Super easy and wonderful flavors. I used creme fraiche instead of sour cream because I had some I wanted to use up and unlike sour cream it doesn't curdle when added to hot soup. I, too, thought 1 tablespoon of lime juice seemed like a lot, but it seemed to go well in the soup. I plan on serving with cornmeal scones tomorrow. I think they will go well with the smokey, spicy soup since they are a little sweet. Would also be nice with cheese quesadillas as suggested or a salad and bread.

    We love this soup! Have made it several times already - is definitely an everyday, weeknight go-to. I will be making a ton of this to freeze for when our second baby comes. Most often we have this with grilled cheese, but most recently we had it alongside the Brie, Apple, and Arugula Quesadillas.

    I have made this recipe many times and it is always delicious. Don't skip the cream. It really gives it a nice flavor. After making this recipe a ton of times as is, I have tried it with a few modifications. I doubled the beans, tomatoes, bacon and spices and it comes out as a thicker soup. I also only blend half the soup, because I like it a little chunky. This last time I used these little Knorr Chipotle cubes that I found in the hispanic isle at the grocery store and it gave it a nice kick. They are delicious and waaaay cheaper than Chipotle chili powder in the normal spice isle.

    This was really, really good. Even my boyfriend, who is not a fan of pureed soups, liked it. Served it with Cooking Light's Spicy Chicken Quesadilla. It was very easy to make and just a fun, different dinner. I will definitely make again. Just one note: I think this is two servings, not enough for four.

    This was a good recipe! I would make a few changes, just based on what I like: add more bacon (so you can actually taste it), and use 2 cans of black beans and only 1/2 can of tomatoes. Also, don't forget to sprinkle some cheese on top! The Cilantro- Lime Cream is the best part and can definitely be used for other recipes too!

    Very tasty. Made to directions except added one diced chorizo sausage to the blended soup & brought all back to temp. Subbed fat-free sour cream. Served with the recommended flour quesadillas. Very attractive in the bowl, with the dollop of cilantro cream. Good lunch on a snowy afternoon.

    This was really good! Especially for how quick and easy it is. I did follow suggestions from other reviewers and used 2 cans of black beans and I think I used 3 slices of bacon. I used a whole onion (our onions would never be small enough to only equal 1/2 cup, so it was probably more like 3/4 or a full cup) and 2 cloves of garlic. I always have whole canned chipotle chiles on hand, so I diced about one whole one and probably threw about 1 teaspoon of the "sauce" in as well. Could definitely add more if you like a little heat, I try to keep it reasonable since I am serving a two year old and four year old. Added about an extra cup of chicken broth, but kept the tomatoes the same. I thought this was a perfect balance of bean to tomato flavor. I just used my hand blender and didn't puree super smooth, it's ok to have a little texture in this type of soup in my opinion. The cream is great, but the soup is still excellent without it!

    Super yummy and filling! I should have doubled the recipe! The only change was using fire-roasted tomatoes that I had on hand.

    One of the best black bean soups I have ever tasted and super easy to make. Add some chopped cilantro to the soup after pureeing, and the sourcream dollop is a must.

    Wow! This soup was super good. Great flavor. The only things I did differently was adding a chopped jalapeno (with the onion) and a second can of black beans. Yum!

    Really easy and very tasty! I was surprised how spicy it was but liked it a lot! I made cheese, tomato and mushroom quesadillas. Yummy and delish! I think next time I might dial back the chipolte chili powder just a tad but otherwise superb recipe!
