Black-Bean Soup with Avocado Salsa

    Very good flavor but I think that ALL of the beans should be pureed to make the soup a creamy consistency. Also, I let it simmer for a lot longer than 5 minutes.

    This soup has great flavor, but would not be my first pick for serving to guests just because it does not look that appetizing. It did not come out quite as creamy looking as the picture...I might puree more of the beans next time. The avocado / radish topping is definitely a must - So good! However, I would reduce the salt by 1/2 t. for the garnish next time. A great solid recipe for a weeknight family meal.

    This recipe makes a great soup; it's easy to fix and fast. I just finished making it and I'm sure the soup will only get better within the next day or so. I did not make the avocado salsa. Great recipe for everyday or add the garnish for a fancier event.
