3 (15-ounce) cans no-salt-added black beans, drained
2 (14 1/4-ounce) cans no-salt-added chicken broth
1 cup chopped onion
1 cup chopped sweet red pepper
2 cloves garlic, minced
1/2 pound extra-lean cooked ham, diced
3/4 teaspoon dried oregano
1/2 teaspoon pepper
1/4 teaspoon salt
How to Make It
Combine first 5 ingredients in a Dutch oven; bring to a boil. Cover, reduce heat, and simmer 30 minutes.
Transfer 2 cups bean mixture to container of an electric blender or food processor; cover and process until smooth. Return pureed bean mixture to Dutch oven. Add ham and remaining ingredients. Bring to a boil; reduce heat, and simmer, uncovered, 20 minutes or until thickened.
