Black Bean Salsa

Yield 2 1/4 cups

Ingredients

  • 1 (15-ounce) can black beans, drained
  • 2 canned chipotle chiles in adobo sauce, minced
  • 3 green onions, chopped
  • 1/2 cup finely chopped sweet yellow pepper
  • 1 plum tomato, finely chopped
  • 1 tablespoon chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt

How to Make It

  1. Combine all ingredients in a bowl, tossing well. Cover and chill at least 1 hour.
