Ingredients

  • 2 cans (15 oz. each) black beans
  • 2 tablespoons sherry vinegar
  • 2 tablespoons chopped red onion
  • About 2 ounces queso blanco cheese with green chilies and epazote

Preparation

  1. Drain beans. In a bowl, mix beans with vinegar and onion. Thinly shave cheese and mix with salad.
