A quick way for a new twist on a summer time favorite. Great presentation. This is also a kid-friendly dish to prepare. I used a Tabasco flavored mayonnaise and added a slice of red onion as well. Delicious.

- 1/2 cup mayonnaise
- 2 tablespoons Basil Pesto
- 8 frozen biscuits, baked
- 8 thick bacon slices, cooked and halved
- 8 Bibb lettuce leaves
- 8 plum tomato slices
- Stir together mayonnaise and pesto. Spread on cut sides of biscuits. Layer biscuit bottoms with bacon, lettuce, and tomatoes; top with biscuit tops.
