- 1 cup sliced vegetables (onion, tomato, and zucchini)
- 1 egg
- 2 egg whites
- Salt and pepper, to taste
- 1 tablespoon crumbled feta or grated Parmesan
- Preheat oven to 350°. Coat a small nonstick ovenproof pan with cooking spray, and sauté veggies over medium heat. Whisk together the next 3 ingredients (through salt and pepper); pour into pan, and stir until slightly solidified. Bake 15-20 minutes or until almost firm. Sprinkle frittata with cheese, and bake until firm; serve.
