Bethenny's Frittata

Quentin Bacon
Yield Makes 1 serving
It's just 173 calories--only half that of a typical frittata!

Ingredients

  • 1 cup sliced vegetables (onion, tomato, and zucchini)
  • 1 egg
  • 2 egg whites
  • Salt and pepper, to taste
  • 1 tablespoon crumbled feta or grated Parmesan

How to Make It

  1. Preheat oven to 350°. Coat a small nonstick ovenproof pan with cooking spray, and sauté veggies over medium heat. Whisk together the next 3 ingredients (through salt and pepper); pour into pan, and stir until slightly solidified. Bake 15-20 minutes or until almost firm. Sprinkle frittata with cheese, and bake until firm; serve.
