Beth's Cornbread

Beth's Cornbread

  • 1 cup flour
  • 1 cup cornmeal
  • (If you use self-rising cornmeal and self-rising flour, omit the baking powder and adjust salt.)
  • 1 1/2 tsp baking powder/cup
  • 1/2 tsp salt/cup
  • 1 egg
  • 2 Tbs shortening or oil
  • 1 c sugar
  • 1 1/2 c milk


Heat oven to 400 degrees F. Put additional oil in your skillet and preheat it for 8 minutes so the bread won't stick. Mix all the above ingredients. Let sit a few minutes to wet ingredients. Add small amounts of milk, if necessary, until the batter has the consistency of pancake batter. Pour the batter into the hot skillet--it should sizzle just a bit. Bake 25 minutes or until the crust is nice a brown. Let cool in pan until just warm. Enjoy!
