- 1 cup flour
- 1 cup cornmeal
- (If you use self-rising cornmeal and self-rising flour, omit the baking powder and adjust salt.)
- 1 1/2 tsp baking powder/cup
- 1/2 tsp salt/cup
- 1 egg
- 2 Tbs shortening or oil
- 1 c sugar
- 1 1/2 c milk
- Heat oven to 400 degrees F. Put additional oil in your skillet and preheat it for 8 minutes so the bread won't stick. Mix all the above ingredients. Let sit a few minutes to wet ingredients. Add small amounts of milk, if necessary, until the batter has the consistency of pancake batter. Pour the batter into the hot skillet--it should sizzle just a bit. Bake 25 minutes or until the crust is nice a brown. Let cool in pan until just warm. Enjoy!
